Foie gras is in the sights of the repression of fraud. A vast investigation was carried out last year. 35 samples, 207 controls in 68 establishments. The finds are sometimes disturbing: feather residue, pieces swollen with water, enough to cut the appetite of consumers. “I have heard many things about foie gras but the method of putting water in foie gras, I had never heard“, explains a Lille resident.
Particularly targeted by the authorities, blocks of foie gras, that is to say reconstituted foie gras obtained by mixing it with water. The quantity must not exceed 10% and the pieces of meat must represent 30% of the weight of the product. However, in 4 samples out of 10, there is excess water. The investigation worries producers and makes them fear repercussions for the sector.
